    I’ve always loved dark chocolate, so when I saw this I had to try it. It took a little getting used to-I don’t cook with it, I just eat it, but once I got used to it, it was the most intense chocolate I had ever had. Dark chocolate is in the news these days-it has a lot of antioxidants and fiber and other compounds that are very beneficial. Chocolate is a plant food-it’s just one that gets loaded up with sugar and milk and fat, so the health benefits are only to be found in the really dark stuff, like more than 70% cocoa. And what health benefits-preliminary studies are showing that dark chocolate can lower cholesterol and blood pressure and even increase insulin sensitivity, which can benefit diabetes and help a person lose weight. I was eating a little of this chocolate every day for my daily fix-it only has 70 calories a square, but now that it’s not just an indulgence I get to feel good about eating it. And if you don’t want to eat it, it’s really good for baking-it’s very smooth and melts and blends easily into whatever you’re preparing.

    The title of this review is in Latin. It means that the taste of something is purely subjective.

    I am a diabetic and find that I can keep much tighter control of my blood sugar by avoiding sweets. That means that I am exquisitely sensitive to the subtle sweetness of unsweetened foods. For example, I love the sweetness of steamed celery with nothing on it but butter.

    I purchase this Ghirardelli Baking Bar for eating only, not for baking. I find it to be wonderful for eating. Please note that if you are accustomed to eating highly sweetened foods, it is quite possible that you will gag if you try to eat this. It’s all a master of taste. Ghirardelli, on its website, explicitly states that you should not eat this.

    Here is my very subjective assessment of this product:

    *It has a pleasant flavor. Some chocolates are dry, hard, and chalky. This one is easy to bite into, smooth, moist, and richly flavorful as the cocoa butter dissolves in the mouth.

    *It is molded in a convenient form. Some chocolates are very, very hard. Not this chocolate. It is quite easy to break off a piece with your fingers. For other bars you need a hammer and chisel, literally.

    *It is reasonably priced. Some chocolates cost three or more times the price of this bar, per ounce.

    I have tried eating two other high-cacao content bars and I find this to be the best overall.

    The Scharffen-Berger 99% bar might be great for baking, but it is not easy to eat. It is rock hard. This makes it difficult to break off a piece to eat without some rugged tools and it requires a lot of jaw pressure to eat.

    The Lindt Excellence 99% bar is the best chocolate I have eaten to date. It has a luxurious, deep taste that beats this Ghirardelli bar hands down. Unlike this Ghirardelli bar, the Lindt Excellence bar is produced for the explicit purpose of eating, not baking. So, it is even softer than this Ghirardelli product. But it is a luxury item and carries an exorbitantly high price tag. If you want to maximize eating pleasure, get the Lindt Excellence 99%. If you want to have a satisfactory taste experience at a reasonable price, get the Ghirardelli Baking Bar.

    I give this bar 5 stars because it satisfies more criteria (eating experience, usability, price) than do either of the two competitors that I have tried.

    I love the Ghirardelli black chocolate. It took me a little time to find it online, as I didn’t know it is considered “baking” cacao. I don’t use it for baking. I eat it as it is and it’s wonderful.
